When I travel, I’m not just looking for landmarks and photo ops; I want to understand the heartbeat of a place. And for me, that heartbeat often begins with a bite.During our time in Valencia, Spain, we joined a Secret Food Tour that completely reshaped how we experienced the city. It wasn’t just about food; it was about connection, tradition, and flavor woven into history.Our tour kicked off with a taste of the original horchata, nothing like the milky cinnamon drink you might know from Mexico but originated in Spain. This Valencian version is made from tiger nuts, a root that’s naturally sweet and creamy. Traditionally served to kids after school, it’s completely free of milk and alcohol. Learning about its roots (pun intended!) while sipping it fresh in a bustling market was the perfect introduction to Spain’s rich culinary culture.Next up: sardines. Now, full disclosure - Tom is not a fish fan. But even he was won over by these freshly fried beauties, drizzled in fragrant local olive oil and garlic. Crispy on the outside, juicy on the inside, and seasoned just right. Watching him go in for a second bite was proof enough; this food was something special.Then came the paella. The dish Valencia is known for. Rich, hearty, deeply flavorful, and truly filling. There's something about sharing a pan of paella, fork in hand and surrounded by laughter, that makes you feel like part of the community.We finished the tour with paprika olives that had the perfect briny bite, walking through winding alleys with a little more joy in our step and a lot more flavor on our palate.These moments - the surprise of new textures, the warmth of our guide sharing family recipes, the camaraderie of fellow food lovers—all come together to tell a deeper story of a place.
